CARROT & BANANA CAKE

YIELDS 2 LOAF CAKES

There’s a super-moist teatime treat you simply HAVE to try. Watch your family go bananas for every slice.

INGREDIENTS

Cake:

• 1 cup white sugar

• 1 cup sunflower oil

• 3 large eggs

• 1 ½ cup cake flour

• 2 tsp baking powder

• 1 tsp baking soda

• 2ml salt

• 2 tsp ground cinnamon

• 1 cup banana pulp (about 3 bananas)

• 1 cup grated carrots

• ½ cup walnuts, chopped

 

Icing:

• 100g butter

• ½ cup icing sugar

• 100g cream cheese

• 1 tsp vanilla essence

METHOD

Cake:

• Pre- heat oven to 180°C.

• Cream the sugar, oil and eggs till light and fluffy.

• Sift flour, baking powder, baking soda, salt and cinnamon together.

• Mix the flour mixture into sugar mixture, blend well while adding.

• Mix the carrots, bananas and nuts together.

• Gently fold the carrot mixture into the batter (do not stir too much).

• Divide the batter into 2 Twinsaver Foil Loaf Pans.

• Bake for 20 – 25min. Test with knife into middle of cake (if knife comes out dry the cake is ready).

• Remove from oven and cool down.

 

Icing:

• Cream butter and cream cheese together till soft.

• Add the icing sugar and blend till smooth. Mix in the vanilla essence.

• Spread over the 2 cakes.

• Slice and serve.

COOKING TIP: Ripened bananas can be frozen in an airtight container or Twinsaver Foil containers and defrosted when needed for baking.
