BAKED PUMPKIN MOUSSE WITH CINNAMON SUGAR

YIELDS 2 DISHES

Cooked low and slow this pulled pork recipe practically guarantees empty plates every time.

INGREDIENTS

• 2 cup cooked pumpkin/ butternut or gem squash

• 1 tbs butter, melted

• ½ cup white sugar

• 5 tbs cake flour

• 2 tsp baking powder

• ½ tsp salt

• 1 cup milk

• 3 large eggs

• 5ml ground cinnamon mixed with 50ml white sugar

METHOD

• Pre-heat oven to 160°C.

• Beat the milk and eggs together.

• Sift sugar, flour, baking powder and salt together.

• Mix flour mixture into the egg mixture.  Beat till smooth.

• Stir in the pumpkin and melted butter into the batter with a spoon.

• Pour the batter equally into 2 Twinsaver Large Freezer Dishes.

• Sprinkle the mixed cinnamon sugar over the top.

• Bake for 45-60 min till golden brown.

COOKING TIP: This dish freezes very well (cover with cling wrap). Defrost when required, remove cover and heat in low oven for 20min.  Serve with meat dish or as a side dish for a braai.
