Even if you’re not doing a turkey, it doesn’t mean you have to do without the delicious taste of zesty stuffing combined with crispy bacon. Bring on the YUM!

Ingredients:

·       1kg pork mince
·       1 onion – finely chopped
·       1 cup walnuts – chopped
·       30 pieces streaky bacon
·       1 cup fresh breadcrumbs
·       zest of 1 lemon
·       1 large egg yolk
·       1 small apple – grated
·       Salt and pepper to taste
·       ½ cup fresh parsley – finely chopped

 Method:

·       Preheat oven to 180 C.
·       In a large bowl, mix together the pork mince, onion, walnuts, breadcrumbs, lemon zest, apple, egg yolk, salt and pepper and parsley.
·       Wash your hands and use them to incorporate all the ingredients.
·       Lay out the bacon strips on a baking tray and using your hands, form golf-size balls of the mince mixture. Place one on a bacon strip and wrap it around the mince.
·       Repeat this process until you have finished all the mixture.

Bake for 20 – 25 minutes or until cooked through.
